This recipe is a quick and easy. Use it if you're looking for a meal of tasty street tacos.
1-2 lb flank steak/flap meat/thin cut beef/skirt steak/etc.
1 cup orange juice
1 cups light Mexican beer (Tecate, Corona, etc.) (optional)
1 lime, juiced
3-4 tbsp yellow mustard
2 Jalapeños, chopped (roasted, if you have time)
1 pepper (poblano preferred, but bell would work as an alternative)
2 tbsp salt
1 tbsp chili powder (optional)
1/2 tbsp cumin
1/2 tbsp smoked paprika
1/2 tbsp oregano
1/2 tbsp ground black pepper
1 tsp cayenne pepper
2 garlic cloves
1/2 cup cilantro
1/2 cup green onion (optional)
1/2 cup white onion

Cut peppers in half for roasting, and remove seeds. Air fry for 10 min at 400F.
Option #2: If roasting in an oven, broil for 3-4 minutes
Option #3: With a gas burner, do not cut in half. Instead, stick a fork in the pepper, then hold the it over the flame for 60-90 seconds until the skin on one side chars and blisters. It should be mostly black, with just a few areas of green. Do not let the pepper catch fire. Turn the pepper and let the other side roast for 60-90 seconds till evenly charred. You will get spicer peppers with this option.
Chop cilantro, green onion, and white onion.
When the peppers are done roasting, peel off skin and dice.
In a large metal bowl, add the orange juice, beer, lime juice, yellow mustard, diced peppers, chili powder, cumin, smoked paprika, oregano, cayenne pepper, salt, pepper, cilantro, green onion, white onion, and peppers.
Place the meat into the bowl, or if you're doing a larger batch place into a baking dish and pour the marinade on top. Marinade for at least 10 minutes (or place in the fridge over night if preparing in advance).
Air Fry meat for 12 minutes at 400F, flipping half-way through (for thicker pieces of meat, increase the time to 20 minutes).
Warm up your tortillas. (I like to throw them directly on the gas burner for ~10 seconds on each side. This is the fastest and easiest way to heat them up.)
Serve on tacos with some chopped onion, cilantro, cojita cheese, and a squeeze of lime.
For more spice and flavor, blend the peppers after roasting.
You can alternatively grill over direct heat for about 5-7 minutes on each side.
