3 cups Flour
1-1/2 tsp cinnamon
1 tsp baking soda
1 tsp salt
¼ tsp baking powder
3 eggs
2 cups sugar
1 cup cooking oil (vegetable oil)
1 tbsp vanilla
2 cups grated Zucchini
½ cup chopped walnuts (optional)
Mix dry ingredients (except sugar) together in bowl.
In a separate bowl, beat the eggs until light, then add sugar and mix well.
Then slowly add the oil. It will take a little while to mix the oil in.
Then add the vanilla.
Then add mixed dry ingredients.
Then mix in Zucchini.
Mix everything together.
Add walnuts, if desired
Grease pans and add the batter
Cook at 350 °F for an hour.
