This classic recipe is a traditional family dish that almost everyone in your family will love. With only a few ingredients, you can easily make this delicious Chinese household dish.
For the chicken
1.32 lbs (600 g) chicken breast sliced
½ tablespoon Chinese five-spice
½ tablespoon salt
1¼ tablespoon ground black pepper
1 cup cornflour
2 cups vegetable oil, for frying
For vegetable toppings
1 cup mixed (red and green) chillies, chopped
3 cloves garlic, chopped
4 pcs spring onions, sliced
1 pc small onion, chopped
1 teaspoon salt
1 teaspoon white pepper
1 teaspoon Chinese five-spice
Dice chicken breasts into even pieces and add salt, Chinese five-spice, and black pepper in a bowl. Toss to coat the breasts thoroughly.
Then, toss the breast pieces in the cornflour, and be sure to coat them properly.
Cook the chicken:
Air Fryer
Spritz or brush the chicken with oil then air fry the chicken at 400ºF for 8 minutes.
Turn the chicken pieces over, spritz or brush with a bit more oil, and then cook for another 7 minutes.
Fry in oil
Take a skillet or pan and take one cup of oil for frying. Set the temperature on medium heat and wait until the oil is properly heated. Add the coated meat to the pan one piece at a time to ensure the oil does not boil over.
Fry for 5 to 7 minutes and stir the salt and pepper chicken to get brown on every side. You may need to cook them in 2 batches.
After frying them properly, take them out from the pan and place them in a paper towel or kitchen roll to soak up the excess oil.
Place a wok at a high temperature and add 2 tablespoon vegetable oil, garlic, chopped onions, and fry them until they are light brown. Add mixed chillies, spring onions, and stir them to fry for a minute. Then add a pinch of salt, black pepper, and Chinese five-spice and stir to coat the vegetables.
Then add fried chickens to the vegetables, stir to coat the meat with the vegetable mix, and cook for another one minute or until they are properly mixed.
Take the salt and pepper chicken out from heat and serve immediately.
You can substitute green onions or scallions for spring onions
Masa can be used for corn flour
Substitutes for green chillies are most any type of medium spicy pepper.
This recipe goes well with Pineapple Fried Rice as a side
Try adding chopped fresh ginger, sliced Chinese greens (e.g. bok choy), and/or basil to taste
You can make this more healthy by baking the chicken in an oven or air fryer
