1 (8 or 9 inch) BAKED pastry Shell, cooled or 1 (9 inch) graham cracker crust. I use the Pillsbury ready crust- they will give you instructions on how to bake the crust. If you do not have a pie plate for baking. Buy the frozen crust already made and follow baking & thawing instructions.
3 eggs separated
1 (14 ounce can of Sweetened Condensed Milk) NOT EVAPORATED MILK
1/2 cup of lemon juice (REAL LEMON is the brand you will probable find)
1/4 teaspoon of cream of tartar - found in with the spices
1/2 cup of sugar
Preheat oven to 350 degrees
In a medium mixing bowl, beat egg yolks, stir in condensed milk & lemon juice.
Turn into the prepared shell - meaning baked pie crust.
In a small bowl beat egg whites with cream of tartar until soft peaks form; gradually add sugar, beating until peaks are stiff.
Spread meringue on tip of pie, sealing carefully to edge of shell.
Bake for 15 minutes or until meringue is golden brown.
Cool. Chill before serving.
Make the night before - if possible.
