500 g (1 lb 2 oz) gnocchi
125 g (4 oz) mascarpone
400 g (14 oz) green asparagus, cut into 2 cm (3/4 in) segments
50 g (2 oz / 1/2 cup) grated Parmesan, plus extra to serve
1 spring onion (scallion), finely sliced
300 ml (10 fl oz / 1-1/4 cups) water
2 pinches of salt
2 pinches of pepper
Put all ingredients into a 30 cm (12 in) frying pan (skillet).
Cook for 10 minutes over a medium heat, stirring.
Serve with grated parmesan.
