400 g spelt flour
180 g: 2 eggs + water
Bring a large pot of salted water to a boil (~3.5 quarts)
Add ingredients to the Pasta Maker and make the desired pasta style
Add pasta to the water and return to a boil. Cook for 3 minutes, drain, and serve.
If using white spelt the dough can get very sticky in the pasta maker. After the dough is processed and starting to stick together, break it into pieces and toss in a bowl with a small amount of all purpose flour. This will help keep the pieces from sticking together when tumbling in the pasta maker. Repeat as necessary as you make the pasta.
