Cape Gooseberries are small orange berries that are nutritious and have many health benefits. They are known as ground cherries, Physalis minima, pygmy ground cherry, Inca berry, golden strawberry, and many other names. Cape gooseberries are rich in fructose and okay to eat for diabetics. Rasbhari or Cape Gooseberry Jam is rich in vitamin A and provides 14% of daily requirements of vitamin A. Vitamin A is good for eyes, prevent cataracts, and protect muscular degeneration.
The jam is a golden delicious fruity delight that smoothly spreads on toast. The golden berry naturally has a good proportion of pectin, so none needs to be added in order to help the jam to set. In addition, no preservatives are required.
Cape Gooseberry – 250 grams
Sugar – 1/2 cup
Water – 1/2 cup
Juice of half lemon
Remove husks from cape gooseberries
Add cape gooseberry to a deep saucepan with 1/2 cup of water. Cook covered for 10 minutes on medium-high flame.
Add sugar and cook on medium-low flame for 10-25 minutes. Once jam starts to thickens switch off the flame.
Allow jam to cool down. Then add lemon juice and mix well.
Add to a sterilized jar and put in the refrigerator
Lift jam with a spatula and pour jam, it should flow together and not in drops.
Pour a few drops of prepared jam on a plate if it spreads then it’s not ready if it stays firm without moving then the jam is ready.
Allow jam to cool completely. Then store in a clean and dry glass jar. Ideally it will be sterilized.
Keep jam in the refrigerator after every use. Always use a clean and dry spoon and the jam can last up to 3 months.
After cooking, and before adding lemon juice, you can use an ice bath to quickly bring the jam to room temperature.
