Bread machine focaccia dough made with garlic and rosemary is brushed with oil and sprinkled with more rosemary, resulting in an incredibly delicious flatbread. This is fantastic with olive oil and balsamic vinegar with a little grated Parmesan cheese on top.
1 cup lukewarm water (98°F -105°F)
4 tablespoons olive oil, divided
2 teaspoons chopped garlic
3 cups bread flour
1 ½ tablespoons chopped fresh rosemary, divided
or ½ to 1 tablespoon of dried rosemary (grind if you want more rosemary flavor)
½ teaspoon salt
1 ½ teaspoons active dry yeast
Optional
1/3 cup sun-dried tomatoes, coarsely chopped
1/4 cup grated parmesan cheese
Place water, 2 tablespoons olive oil, garlic, bread flour, 1 tablespoon rosemary, salt, and yeast into a bread machine in the order listed.
Run the Dough cycle.
Optional: Add 1/3 cup sun-dried tomatoes and 1/4 cup grated parmesan cheese after 20 minutes
Remove dough from the machine after the cycle is done, about 90 minutes.
Place a pizza stone in the oven, with the rack in the center position
Preheat oven to 425°F
Sprinkle a wooden pizza paddle with cornmeal
Shape the dough into a thick pizza shape (a round loaf).
Optional: Use your fingers to dimple the dough every inch or so
When the oven is hot, brush the top of the brad with 1 tablespoon olive oil and sprinkle with 2 teaspoons coarse salt
Slide the bread onto the pizza stone and bake for 15 to 20 minutes, until the top is golden brown and the underside is browned as well.
Slice and serve hot or at room temperature.
Use the point of a long knife to test the dough in the center for doneness before removing the focaccia from the oven
