800 g (1 lb 12 oz) pumpkin, peeled and cut into large cubes
2 carrots, peeled and cut into 1 cm (1/2 in) rounds
1 red (bell) pepper, cut into large squares
400 g (14 oz) potatoes, cut into large cubes
1 small green chilli, chopped
1 tbsp tomato purée (paste)
200 g (7 oz/generous 3/4 cup) peanut butter
750 ml (25 fl oz / 3 cups) water
1 vegetable stock cube
2 pinches of salt
2 pinches of pepper
50 g (2 oz / 1/3 cup) peanuts, toasted, salted, and roughly chopped, to serve (optional)
Put all the ingredients into a 26 cm (10 in) casserole dish (Dutch oven), setting aside half the chopped chilli.
Simmer for 30 minutes over a medium heat, stirring occasionally.
Add the reserved chilli, to garnish.
If liked, sprinkle with the chopped toasted peanuts, to serve.
